Day 69 - Truth and juicing

Diet after diet and most every weight product promises that this time you will lose pounds and keep it off.   One can hardly look at the news these days without discovering another false advertisement or claim being revealed.  When our children were babies even the doctors changed the rules with every child.  Feed solid food after a year...then 9 months...6 months...3 months... oops that was too soon...and backwards swung the fashion.  Eat eggs - the perfect food - no - they are a danger - wait it is just the yolk - no the egg white has the most allergens - no eggs - oops we were wrong.  And on and on it goes.  How many people, I wonder, have lived much of their lives listening to the 'experts'.  How very confusing and frustrating.   And that is just food - how much sadder if spiritual lives are also left to whatever is in the news, or make (food) or other things our gods.

How fortunate we are to know about Elohim Emet ( Eh-low-heem Eh-meht) True God.  John 17:3 “And this is eternal life, that they may know Thee, the only true God, and Jesus Christ whom Thou hast sent."  Many things, and habits vie for attention and first place in my life.  Many people claim to be our help, the answer for our country, or proclaim to be someone that they are not.  Advertisers try to project qualities or satisfaction or happiness as coming from objects that were not designed or created to produce those results. Although I enjoy food, perhaps more than some, it is with the knowledge that it's enjoyment is temporary.  Food can never satisfy my soul, give me eternal life, or even bring true happiness - nor can anything but Elohim Emet

Interesting day cooking - after making carrot juice I hated to toss all the pulp and decided to invent some recipes.  Dinner today and cake adventure tomorrow.

Breakfast:  Strawberry cheese bake. Egg custard with potted cheese and a bit of cream cheese, baked and topped with strawberries.  Very yummy.

Lunch was an Asian stir-fry made with ground beef, brocolli, onion, sesame oil and Bragg's Aminos.  The chips are salt-free white corn.  It was good, but I think I like this better inside Boston lettuce as a wrap.

Dinner:  Carrot puff with cranberries and side of green beans.

The carrot puff was a great use of the carrot pulp from juicing.  I will do this again!  I buttered a baking dish, filled it half full with the carrot pulp, sprinkled on cranberries and poured mixture of beaten eggs, rice milk and about 1/3 cup potted cheese.  Baked until puffed and browned - about 20 minutes.  Very delicious.  I got the potted cheese at a health store -  it came in a glass jar.  It is a little more moist than ricotta, definitely drier than cottage cheese.  Either could be substituted in this recipe.  I tend to use what is on hand and invent away!
