Day 134 -139 - Tuesday - Sunday - Focusing while Working


Work has been the focus though we took one night for fun.   Most of the week we had either cottage cheese and fruit or yogurt for breakfast and salad for lunch.

I'll recap with pictures the fun food - Our evening out was at Cheesecake factory - Chicken Piccatta with snow peas and julienned vegetables instead of pasta - a very yummy and healthy switch.  The veggies were sauteed in dark sesame oil and were very tasty.Later tres desserts from Publix bakery - Tirimisu, Key Lime cheesecake, and brownie cheesecake with strawberries.

It was a relaxing and hilarious night - greatly aided by the chair massages we got at Sawgrass Mall :)  Luxurious and greatly needed.

Mango, pineapple and coconut blended together make an awesome smoothie.  That and the previous night's leftover Tiramisu formed our 'lunch' as we traveled. A return to the Rum Shack in Lake Worth for another crab cake was a taste treat with an apple relish this time - lettuce, julienned granny apple, and a lemon-juice and water marinade formed the base for the world's best crabcake... my world anyway.


Olive Garden's chef graciously "non-grilled' my salmon - don't know if he cooked it in foil or what but it was perfectly cooked - flaky, moist and oh, so good.  I will have leftovers for breakfast today,      It has not been difficult to stay on diet as we have worked 12-16 hours a day most days and were too busy keeping hydrated to worry about fancy food.  While working at the storage unit we had tacos brought in, ice water and oranges in the cooler.  We did stop at a Dairy Queen Sunday to celebrate work being done.  I had half a small blizzard with mint, chocolate and pecans and tasted a non-fat sugar-free amaretto almond ice cream which made me wish I'd ordered that!  I think I will try adding a little amaretto flavor to vanilla DQ ice cream when I get home.

Time for breakfast of leftovers:  Salmon and then flan which we bought for dessert night and forgot to try.  Then on the road again.  Sorry for the brief and infrequent updates, but this has been a hectic trip. Devotions have been focused around Beth Moore's study on Breaking Free of Childhood Abuse.  I can highly recommend the book and the study.  

We both tossed out a couple of things which are too loose as we have lost several inches in the waist and hips.  That is a fun result of working long hot hours in the Florida sun.  Feeling victorious and ready to travel.
