Day 271 - Glycation and aging

Glycation?

A relative’s friend, age 32 recently had a heart attack. He is slim and fairly fit. What went wrong? One of his habits that he was ordered to stop was drinking at least one large (I mean quart size) soda every day. I began to wonder what would that have to do with his heart? Read on what surprising things I learned about glycation.

Glycation is a process where sugar molecules, such as fructose or glucose, bond to a protein or lipid molecule (not water soluble - fats and steroids) without the controlling action of an enzyme. This process combines the molecules to form a tangled mess of tissue. Glycated tissue is tough and inflexible. What will that lead to?

Outside of body – wrinkling of skin
Inside of body – wrinkling of internal organs – tough inelastic connective tissue all through the body. This is especially important in the heart, kidneys, brain, eyes, and pancreas.

The lack of flexibility in the important organs leads to reduced functionality and early death.

Glycation (sugar) must be dramatically reduced if aging is to be minimized. However some feel it cannot be stopped completely or reversed. Reducing glycation considerably can be accomplished by making changes in diet and lifestyle.

Reduce sugar in the diet. Besides the varied forms of sugar including honey and maple syrup, many starchy foods are close to 100% sugar including potatoes, rice, pasta, and grain (think bread). All of these foods must be reduced to a minimum. This is most easily done by cutting them out totally at home, and eating minimal amounts when eating out.  Add Enzymes to the diet.  Everyone's body slows down enzyme production as they age and most enzymes from food are found in their closest to natural state.

A second cause of glycation is eating foods cooked at high temperatures.

Total carbohydrates (sugar and starches) recommended for a healthy diet has been suggested between 3-6 oz. per day. This would be from vegetables, beans and small amounts of fruit (instead of the usual starches at meals – potatoes, bread, pasta and rice).
