Days 303 - 306 Enjoy the colors!

The more colorful the plate, the healthier it is likely to be - as long as the colors are natural :)

I know I am loving the variety of colors from this time of year - yellow and green and red tomatoes - squash, pumpkin and sweet potatoes of every golden hue... both gold and red beets - just loving the roasted beets (cut in half sprinkle with olive oil and salt and roast in oven about 40 minutes until tender).

The first two pictures are from Charcoal Grill in Burlington - some of the best Tilapia I've ever had - perfectly done, moist and delicious.  And they have Sweet Potato fries!

Third pic - Rice noodles, Yellow Tomato Sauce, Broccoli and Italian Sausage - We loved the low acid marinara.

Then check out the pink soup!  Love, love, love it.
It is Simple Soup - Chicken broth with matchstick carrots and onions cooked in it.  Add some cubed (roasted) beets for a delicious pink soup.  You can add leftover meat of choice (I happened to have some scallops)
